If you've stopped at the Belfry Collective Blog you've seen the lead in to this post. I'm feeling a little wacky today. The heat heading into the 100 mark hasn't helped. My schedule has made my cooking time extremely limited and I was looking for easy meals.
My prayers were answered in my crock-pot. I got a wonderful crock-pot cookbook from my mom and dad one year. This book has been amazing and such a wonder.
For the south of the border deliciousness try a great Taco Bake. This is one of my favorites. When my best friend and I go down to the country we don’t want to be hassled with cooking. Good thing to, the oven in my trailer doesn’t work. Stove does, but not oven. Anyway, between that and the fact that we don’t want to give up one moment of ATV, shooting or swimming fun we each take our crock-pot down and toss our food in there. Taco Bake. It’s simple and delicious:
1-pound ground beef
1 onion chopped
¾ cups of water
1 1¼ oz packet Taco Seasoning
1 can (15 ounces) tomato sauce
1-8oz pack of uncooked shell macaroni
1 4oz mild green chilies chopped (optional)
2 cups mild shredded Cheddar Cheese
In large skillet brown ground beef and onion. Drain fat. Add water, taco seasoning, and tomato sauce; mix. Simmer 20 minutes. Transfer to crock-pot. Stir in macaroni and chilies. Cover and cook on low for 6-8 hours or 3-4 hours on high. In last 30 minutes add shredded cheese. I keep a separate pouch of extra cheese and a tub of sour cream. I love my stuff extra cheesy.
So beat the heat and still have a great dinner ready when you are.
